A warm, neighbourhood restaurant with its feet planted firmly in the West Country, offering small plates, snacks, sharing dishes and proper puddings alongside a thoughtful drinks menu.
Rooted in time and place, past and present, wilderness and cultivation, we are interested in exploring the connections we feel to the untamed landscapes that exist on the fringes of our modern lives.
We serve simple and delicious food from a daily changing, highly seasonal menu. On whichever day you happen to join us – a meal at Briar is a representation of the best the West Country has to offer, dictated by what we are growing in our small kitchen garden just up the road.

Sam is an ingredients-led chef who has long had a fascination with food and how it is produced. Hailing from Macclesfield on the edge of the Peak District, Sam began his career with Hugh Fearnley-Whittingstall at River Cottage HQ in East Devon, surrounded by farm-to-table food and craft-based cookery.
Following time spent in North Wales with Halen Môn, The Anglesey Sea Salt Company, Sam returned to the South West as Head Chef of Glebe House, an agritourism-inspired guest house and restaurant in Devon. Sam’s food is humble, unfussy and delicious, using proper craft techniques like butchery, bread making and preservation. Ingredients are sourced conscientiously and used in such a way that the guests feel a connection to the rivers, fields and forests surrounding them.
Twenty years after setting up The Diced Carrot, his first restaurant, in his bedroom (aged 9), Sam, Claudia and Aled opened Briar at Number One in the summer of 2024.

Hotel guests are required to reserve a table well in advance to avoid disappointment.
Breakfast is served daily 8:00am – 10:00am (earlier on request)
Breakfast for our guests is very special – an abundant farmhouse feast with lashings of fresh coffee and tea, organic milk, granola, yoghurt, warm bread, freshly baked croissants, soft boiled eggs, homemade jams, seasonal fruits and compotes, local cheese, ham and juices.
